Salsa Verde Chicken Spinach Salad

Trying to eat healthy is a constant struggle for me for two reasons:
A) I love fat kid food
B) Preparation ( which kinda goes hand in hand with laziness)

I purchased a crock pot in the fall and I have to say its life changing. Throw some ingredients in a pot, leave them for 8 hours and voila you have a hot meal when you get home. I purchased this Bella Collection crock pot off amazon:

It was worth every penny! It really helps cut down prep time because it does the cooking for you while your at work.

Last night I made this bomb.com salad and I thought I would share:

What you need:

4-5 Boneless skinless chicken breasts
One container of salsa verde  (I purchased mine from fresh direct)
Seasoning of your choices ( I use a jerk seasoning that is spicy and salty)
Chili Flakes (optional for an additional kick)


Throw all of the ingredients above into your crock pot and cook on low for 8 hours. When finished you take two forks and shred the chicken. Mix well and add any additional seasoning to taste. Let sit on "warm mode" in crock pot.

Additional ingredients:
Fresh Spinach
Avocado
One tsp Lemon juice
Seasoning Salt
Pineapple Salsa ( I purchased from Trader Joe's)

In a separate bowl mash your avocado, seasoning salt and lemon juice (like your making a guacamole- which you could do as well, this is just simple and quick).

Place a large handful of washed spinach on your plate, add a generous amount of your warm shredded chicken, top with avocado mixture and pineapple salsa. This meal is fast, healthy and delicious I promise it wont disappoint! Enjoy!

Meal in a Mason- Super Easy Smoothie

I have been MIA lately, and really only posting on my instagram account- lo siento! About a week ago I posted this super simple easy and delish smoothie recipe on ig, so I thought I would share it on here too. Makes for a great meal replacement as it is really filling.

Here's what you need:
6 Ice cubes
3/4cup unsweetend almond milk
Generous handful of spinach
1 heaping tbsp of natural peanut butter
1 scoop chocolate protein powder
1 Tbsp of chia seeds
1 Tbsp flax
Tbsp coconut shreds

Blend well and enjoy!!!!
