Still dressing for Winter.. Happy Spring!

So its still cold has fuck in New York and it is officially Spring. Everyone is slightly depressed and swearing they are moving to California or Florida in the nest year, myself included. This is an easy comfy outfit I put together for work the other day. The jacket is a new fav of mine- its menswear inspired, super over sized (which I love) and cheap! Details below:

Salsa Verde Chicken Spinach Salad

Trying to eat healthy is a constant struggle for me for two reasons:
A) I love fat kid food
B) Preparation ( which kinda goes hand in hand with laziness)

I purchased a crock pot in the fall and I have to say its life changing. Throw some ingredients in a pot, leave them for 8 hours and voila you have a hot meal when you get home. I purchased this Bella Collection crock pot off amazon:

It was worth every penny! It really helps cut down prep time because it does the cooking for you while your at work.

Last night I made this bomb.com salad and I thought I would share:

What you need:

4-5 Boneless skinless chicken breasts
One container of salsa verde  (I purchased mine from fresh direct)
Seasoning of your choices ( I use a jerk seasoning that is spicy and salty)
Chili Flakes (optional for an additional kick)


Throw all of the ingredients above into your crock pot and cook on low for 8 hours. When finished you take two forks and shred the chicken. Mix well and add any additional seasoning to taste. Let sit on "warm mode" in crock pot.

Additional ingredients:
Fresh Spinach
Avocado
One tsp Lemon juice
Seasoning Salt
Pineapple Salsa ( I purchased from Trader Joe's)

In a separate bowl mash your avocado, seasoning salt and lemon juice (like your making a guacamole- which you could do as well, this is just simple and quick).

Place a large handful of washed spinach on your plate, add a generous amount of your warm shredded chicken, top with avocado mixture and pineapple salsa. This meal is fast, healthy and delicious I promise it wont disappoint! Enjoy!

Meal in a Mason- Super Easy Smoothie

I have been MIA lately, and really only posting on my instagram account- lo siento! About a week ago I posted this super simple easy and delish smoothie recipe on ig, so I thought I would share it on here too. Makes for a great meal replacement as it is really filling.

Here's what you need:
6 Ice cubes
3/4cup unsweetend almond milk
Generous handful of spinach
1 heaping tbsp of natural peanut butter
1 scoop chocolate protein powder
1 Tbsp of chia seeds
1 Tbsp flax
Tbsp coconut shreds

Blend well and enjoy!!!!

Salted Caramel Tiramisu with Baileys

My friends were hosting an Italian Sunday dinner at their house this past weekend, and I offered to make dessert. I had a craving for salted caramel so I decided to make tiramisu with a twist. I searched the internet for recipes and I decided to combine a few ideas and make my own, recipe below:

I started off by making a homeade salted caramel sauce, I got this reciepe from  Pioneer Woman: http://thepioneerwoman.com/cooking/2014/01/easy-caramel-sauce/
Ingredients
  • 1 cup Brown Sugar
  • 1/2 stick Butter (4 Tablespoons)
  • 1/2 cup Half-and-half Or Cream (cream Will Make It Thicker)
  • 1 Tablespoon Vanilla
  • Generous pinch Of Salt

Preparation Instructions

Mix all ingredients in a medium saucepan over medium-low to medium heat. Cook while whisking gently for 5 to 7 minutes, until thicker. Turn off heat and let cool
If sauce is thin, just continue cooking for a few more minutes.

Ingredients for Tiramisu
  • 1/2 cup heavy whipping cream
  • 1/2 cup granulated sugar
  •  8 ounce package cream cheese, at room temperature
  • 1/2 cup baileys
  • 1 (3 oz.) package ladyfingers (24 fingers)
  • 3 tbsp of homeade caramel sauce
  • Topping: Homemade Whipped Cream:
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • Caramel Sauce
Directions:

Using an electric mixer, beat whipping cream on hight speed until thick. Then add the sugar, and beat until peaks form.
Mix in cream cheese and caramel sauce until combined.
Place a small amount 1/3 of the cream mixture in a trifle dish or small 8x8 dish.
Pour baileys into a bowl.
Dip ladyfingers in Baileys, and place in a single layer in dish.
Repeat layers, ending with cream layer. I did this with two layers of lady fingers.
Make the whipped cream for the topping, with an electric mixer, combine all ingredients and beat until stiff.


Top homemade whip cream and drizzle with caramel sauce ( you will likely have left overs)
Chill in the fridge overnight (8 hours) until you are ready to serve.

Fatkid Heaven: Dough NYC



I recently discovered Dough walking out of a Soul Cylce class with my girlfriend. After busting our asses for 45 minutes neither of us could justify eating a doughnut and nixing all the work we just did. So this AM my boyfriend and I ventured over to Dough in our sweatpants for Sunday morning fatkid breakfast. The choices of doughnuts at dough are endless!  We opted for: salted caramel, Nutella, dulce de leche, cafe au lait, coconut and plain. While they were all delicious, plain and coconut were my hands down favorites. They are fresh, smell amazing and have a great texture my only wish is that they were served warm (mainly the plain one).

I am lash obsessed. I started putting fake lashes on at the ripe old age of 9 for dance competitions. Initially my mother would apply them for me, by 10 I was convinced I was better than her at it.
